63% Cacao with Yucatan Pepita and Epazote - Limited Edition

The pumpkin seeds we add to this bar come from the Calabaza de Pepita Gruesa (Cucurbita argyrosperma) variety, or Xka'o xtoop in Mayan. They are cultivated by a network of producers in southeastern Yucatán, a group of indigenous communities that work with the non-profit organization El Hombre Sobre la Tierra.

These seeds have been part of the Slow Food Mexico Ark of Taste since 2016 as part of their mission to promote the production and consumption of sustainable foods that improve the quality of life of Mayan communities.

For this edition, we combine the pumpkin seeds with a 63% cocoa chocolate from Soconusco (Chiapas) with a touch of epazote and salt, flavors that immediately transport us to the Yucatán Peninsula.
