73% Comalcalco Cacao with LA LUPULOSA BEER - Limited Edition

For the development of this edition, we chose to experiment with La Lupulosa beer, from our friends at Cervecería Insurgente in Tijuana. La Lupulosa was one of the first IPAs made in Mexico and is made with large quantities of American hops that give it an intensely fruity and citrusy personality. When we thought about what a chocolate bar with La Lupulosa would be like, we imagined a bright flavor experience running parallel with chocolate notes, so we decided to work with our cocoa from Comalcalco, Tabasco, and roast it with a moderate profile to highlight these characteristics and obtain a pleasantly citrusy and very fragrant bar.
