Inspired by the tradition of drinking "Curados"—a practice of consuming botanical remedies infused in spirits, offered by village elders—we have created a blend that highlights some of the flavor notes reminiscent of this heritage.
From this blend, we emphasize the bitter nature of three ingredients: Cacao Husk from agroforestry systems in Soconusco (Chiapas), Cachichín, a wild nut from Veracruz sun-dried and hand-peeled, and Ramón Seeds harvested by the RUEZ Women's Cooperative in Chetumal. We balance these bitters with the floral fragrance of Rosita de Cacao, a small flower from a tree species that grows alongside cacao. We source these flowers from Doña Dionisia García in La Chinantla (northeast Oaxaca), an ambassador of Chinantec cuisine and a cacao grower.
We recommend these bitters to add a different latitude of flavor to any cocktail and low-alcohol beverages. It brings extra depth to your Espresso Martini, Manhattan, and Old Fashioned. Transform your Bourbon, Rye Whiskey, or Rum with just a few drops.
