An important part of our values comes from a deep concern for the future of our country's endemic ingredients, and we are honored to present this highly prized criollo chili from the central region of Veracruz.
When fresh, this chili is locally known as Chile Tres Lomos. After harvesting, which happens once a year, the core and seeds are manually removed one by one, and then smoked according to the traditional Southern Totonacapan method. This is a pre-Hispanic ground-level smoking technique using fruit tree woods like guava and capulín for three days.
Experiment with the spice level to your liking, from a few drops to a whole dash. This bitter is the best combination to add a warm sensation to your Negroni, Paloma, and Mezcal cocktails. It pairs very well with Rye Whiskey, Sotol, and most Agave spirits.
